Italian chick pea salad

Ingredients
2 can 14 oz (398 ml) Graves chick peas , drained and rinsed
3 green onions, chopped
10 cherry tomatoes, quartered
1/4 medium red onion, chopped
1/3 cup (80 ml) pitted black olives
1 tbsp (15 ml) capers, drained
1 tbsp (15 ml) chopped parsley
1 tbsp (15 ml) freshly chopped mint
1/4 cup (60 ml) olive oil
2 tbsp (30 ml) wine vinegar
Salt and freshly ground pepper
Preparation
- In a salad bowl, mix together all salad ingredients.
- Toss well and serve.
