Ingredients

1/2 onion, chopped

1 large tomato, chopped

1/2 cup (125 ml) feta cheese, cubed

2 cans 14 oz (398 ml) Graves black turtle beans , drained and rinsed

1 tbsp (15 ml) olive oil

1 tbsp (15 ml) lemon juice

1/4 cup (60 ml) freshly chopped parsley

1/2 tsp (2 ml) dried oregano

Salt and freshly ground pepper

Preparation

  1. In a bowl, mix all ingredients together.
  2. Season to taste and serve.
