Lemon and basil lima bean dip

1 clove garlic
1/2 cup (125 ml) fresh basil
1 tsp (5 ml) lemon zest
1 can 14 oz (398 ml) Graves lima beans , drained and rinsed
1 tbsp (15 ml) lemon juice
1/2 cup (125 ml) plain Greek yogurt
Salt and freshly ground pepper
- In a food processor, chop garlic with basil and lemon juice.
- Add lima beans and process.
- Start the food processor and gradually add lemon juice, followed by yogurt until smooth.
- Season generously.
- Serve with raw vegetables and crackers.
